Quick Radish Chips + Dip

The garden radishes are literally popping out of the ground, surfacing their bright pink skin, so ready to be plucked from the earth. After reading the work of the Glucose Goddess , I’ve been working on eating "veggie starters” while cooking my main meal. “The veggies can be raw, cooked, baked, and be dressed with any protein or fat that you like.” It’s kind of like an aperitif to keep the glucose steady. This kind of snack is something I love while I’m working. It checks a lot of boxes - crunchy, spicy, filling. Yes, please.


Ingredients:
- 1 bunch radishes
- 1 cup Greek yogurt
- 1 tablespoon extra virgin olive oil
- Lemon zest
- Pinch of sea salt, pepper flakes, and nori flakes
- 2 tablespoons crushed pistachios

Instructions:
1. Slice radishes thinly with a mandolin
2. Mix yogurt and lemon zest then spread on plate
3. Sprinkle salt, pepper flakes, nori flakes, and pistachios
4. Drizzle with EVOO, I love using Fancy Peasant
